The Sasquatch is a 25% Honey Process Costa Rica, and 75% Natural Process Brazil blend. When I first roasted the Brazil to dark and tested it in my espresso machine I was blown away. It had amazing notes of dark chocolate and peanut butter that made the shots delicious. What lacked was body, that's where the Costa Rica came in. It added a delightful sweetness to an already tasty shot, while boosting body. After testing several different ratios, I found the 25-75 blend to complement the characteristics of both coffees.

This brazil is naturally processed. The natural process involves drying the coffee cherries with the beans still inside right after harvest. This gives the coffee more fructose which turns into sweetness in your cup.
The natural process allows me to roast this brazil on the darker side of medium so it can be enjoyed best as espresso. I have personally tested batches of this coffee on my espresso machine to perfect how it will taste in yours. The shot being pulled in the video when you first click on the website is actually this brazil!
When brewed normally with drip, french press, pourover, etc. the cup is light and nutty with heavy chocolate notes. The bitterness from roasting this coffee darker, along with the extra sweetnes, translates directly into a cashew chocolate bar.
It packs enough punch to shine through milk based drinks while still being amazing as a standalone double shot. As someone who formerly used to only drink espresso, I’d be more than happy to drink this on its own.
I learned alot from this roast and I am happy to provide you guys with a great tasting specialty coffee forward type medium/dark roast.

This year's Christmas blend is comprised of; 50% washed Kenyan peaberry, 25% double fermented Colombian, 25% Honey process Costa Rica. What makes this blend so special? This blend perfectly mimics the flavor profile of the “Hot Toddy” beverage! Kenya as the base provides heavy notes of clove and spice. The fermented Colombian gives it that boozy kick - and the Costa Rica gives the coffee that warm Christmassy baked pie and cinnamon flavor. I’m happy to start of Good Coffee Co.’s first Christmas blend with something super special. Hopefully you find it gives you the same warm Christmas morning feeling that it gives me.
